L\u2019analyse de ces tendances au prisme du go\u00fbt montre que le dressage \u00e0 l\u2019assiette propose une nouvelle harmonie des sens en particulier de la vue et du go\u00fbt. On peut faire l\u2019hypoth\u00e8se que se d\u00e9veloppe ainsi une v\u00e9ritable esth\u00e9tique gourmande m\u00eame si celle-ci entre parfois en tension avec la recherche d\u2019une belle assiette qui flatte l\u2019oeil.
